INGREDIENTS
- Pasta: 400 g (spaghetti or any type you prefer)
- Seafood: 500 g (shrimp, mussels, calamari, etc.)
- Onion: 1 large (finely chopped)
- Garlic: 3 cloves (minced)
- Tomatoes: 2 (chopped)
- Olive oil: 4 tablespoons
- Parsley: 1/2 cup (chopped)
- Salt: to taste
- Black pepper: to taste
- Red chili pepper: to taste (chopped)
- Lemon juice: from 1 lemon
PREPARATION
- Cook the Pasta:
- In a large pot, boil water and add salt. Then add the pasta and cook according to the package instructions until al dente. Drain and reserve a bit of the cooking water.
- Prepare the Sauce:
- In a large skillet, heat the olive oil over medium heat.
- Add the onion and cook until softened (about 5 minutes).
- Add the garlic and cook for another minute until fragrant.
- Add the chopped tomatoes and cook until they break down (about 5-7 minutes).
- Add the Seafood:
- Add the seafood to the skillet and cook until done (about 5-8 minutes). You can add the chili pepper at this stage if you want a spicy flavor.
- Combine the Ingredients:
- Add the cooked pasta to the skillet and mix all the ingredients together. If the sauce is too dry, you can add a bit of the reserved pasta water.
- Add salt, black pepper, lemon juice, and parsley, mixing well.
- Serve:
- Serve the pasta with seafood hot, adding more parsley or lemon juice as desired.
TIP
You can add some grated cheese or extra virgin olive oil before serving for additional flavor.
