INGREDIENTS
- 500 grams of chicken or lamb, cut into small cubes
- 2 garlic cloves, minced
- 2 tablespoons of olive oil
- 1 teaspoon of ground cumin
- 1 teaspoon of sweet paprika (or hot paprika, depending on preference)
- 1 teaspoon of ground coriander
- 1/2 teaspoon of turmeric
- 1/2 teaspoon of black pepper
- 1/2 teaspoon of cinnamon (optional)
- 1 tablespoon of lemon juice
- Salt to taste
- Wooden or metal skewers
METHOD
- Marinate the meat:
- In a bowl, mix the minced garlic with olive oil, cumin, paprika, coriander, turmeric, black pepper, cinnamon, lemon juice, and salt.
- Add the meat cubes to the mixture and ensure they are fully coated with the marinade.
- Cover the bowl and let the meat marinate in the fridge for at least 2 hours (overnight is better for more flavor).
- Prepare the skewers:
- If using wooden skewers, soak them in water for 30 minutes to prevent them from burning during grilling.
- Thread the marinated meat cubes onto the skewers evenly.
- Grill the skewers:
- Preheat the grill or grill pan over medium-high heat.
- Grill the skewers for about 3-4 minutes on each side until the meat is fully cooked and nicely browned.
- Alternatively, you can cook them in a preheated oven at 200°C (390°F) for 12-15 minutes, turning halfway through.
- Serve:
- Serve the Moorish skewers with a squeeze of fresh lemon. They can be served with warm pita bread, a side salad, or even with rice.
