INGREDIENTS

  • 500 grams of chicken or lamb, cut into small cubes
  • 2 garlic cloves, minced
  • 2 tablespoons of olive oil
  • 1 teaspoon of ground cumin
  • 1 teaspoon of sweet paprika (or hot paprika, depending on preference)
  • 1 teaspoon of ground coriander
  • 1/2 teaspoon of turmeric
  • 1/2 teaspoon of black pepper
  • 1/2 teaspoon of cinnamon (optional)
  • 1 tablespoon of lemon juice
  • Salt to taste
  • Wooden or metal skewers


METHOD

  1. Marinate the meat:
    • In a bowl, mix the minced garlic with olive oil, cumin, paprika, coriander, turmeric, black pepper, cinnamon, lemon juice, and salt.
    • Add the meat cubes to the mixture and ensure they are fully coated with the marinade.
    • Cover the bowl and let the meat marinate in the fridge for at least 2 hours (overnight is better for more flavor).
  2. Prepare the skewers:
    • If using wooden skewers, soak them in water for 30 minutes to prevent them from burning during grilling.
    • Thread the marinated meat cubes onto the skewers evenly.
  3. Grill the skewers:
    • Preheat the grill or grill pan over medium-high heat.
    • Grill the skewers for about 3-4 minutes on each side until the meat is fully cooked and nicely browned.
    • Alternatively, you can cook them in a preheated oven at 200°C (390°F) for 12-15 minutes, turning halfway through.
  4. Serve:
    • Serve the Moorish skewers with a squeeze of fresh lemon. They can be served with warm pita bread, a side salad, or even with rice.
