- 1 kg starchy potatoes
- 100 g grated cheese
- 100 g mozzarella
- 3 eggs
- flour
- breadcrumbs
- salt and pepper
- parsley
PREPARATION METHOD OF POTATO CROQUETTES
- Boil the potatoes and mash them until smooth.
- Add 2 eggs, parsley, grated cheese, salt, and pepper to the mashed potatoes and mix until you get a firm and homogeneous dough.
- Cut the mozzarella into small cubes.
- Take a portion of the dough and shape it into cylinders about 10 to 15 cm long, placing a cube of mozzarella in the center of each croquette.
- Beat the remaining egg. Roll each cylinder first in the beaten egg, then in the flour, and finally in the breadcrumbs.
- Let the croquettes rest in the refrigerator for a few hours.
- Heat oil in a frying pan and fry the croquettes until they are golden and crispy.
- Drain on absorbent paper and serve hot.
