Italian-style potato croquettes are made from mashed potatoes coated in a crispy, golden breadcrumb crust. This classic dish, originating from the Naples and Palermo regions in Italy, was once considered a noble delicacy but has since become a popular street food. Easy and quick to prepare, these delicious croquettes are perfect as an appetizer or a side dish.

INGREDIENTS

    • 1 kg starchy potatoes
    • 100 g grated cheese
    • 100 g mozzarella
    • 3 eggs
    • flour
    • breadcrumbs
    • salt and pepper
    • parsley

PREPARATION METHOD OF POTATO CROQUETTES

  1. Boil the potatoes and mash them until smooth.
  2. Add 2 eggs, parsley, grated cheese, salt, and pepper to the mashed potatoes and mix until you get a firm and homogeneous dough.
  3. Cut the mozzarella into small cubes.
  4. Take a portion of the dough and shape it into cylinders about 10 to 15 cm long, placing a cube of mozzarella in the center of each croquette.
  5. Beat the remaining egg. Roll each cylinder first in the beaten egg, then in the flour, and finally in the breadcrumbs.
  6. Let the croquettes rest in the refrigerator for a few hours.
  7. Heat oil in a frying pan and fry the croquettes until they are golden and crispy.
  8. Drain on absorbent paper and serve hot.
